Sharpening is essentially what the chef's choice is about. This is achieved by the sharpening stones and will frequently need to be replaced. Extra caution to be taken on the removal of the c-clips as they can easily spring out and get lost.

    • Remove the two rubber feet on the motor side of the device.

    • Remove the five Phillips screws from the bottom of the case.

    • These screws are recessed deep in the device, so a long, thin screwdriver is required.

    • Remove the two hex-cap screws on the bottom using a pair of pliers.

    • Carefully flip the device right-side-up while grasping the top and bottom pieces.

    • The white cover should lift off with no resistance. If it does not, ensure all screws were removed in previous step.

    • Remove the sharpener guard by gently pulling up on it.

    • If the sharpener guard does not come off easily, ensure all screws were removed in step 1.

    • With the outer case removed, firmly grasp the motor-axle attachment and remove it from the base. It should come right off of the assembly.

    • Use a screwdriver to push the linkage pins out of the rod.

    • Use pliers to pull the pins the rest of the way out.

    • Remove all the linkage pins necessary to slide desired sharpening stone off the end of the shaft.

    • On the rotating apparatus, holding the sharpening stones in place, are two C-clamps that grip the axle.

    • Remove the C-clamps by applying pressure to both sides of the "C" and pushing the clamp over and off of the axle.

    • Pull the bearing off the shaft. It is in between the two C-clamps.

    • These clamps are very small; use caution to avoid dropping them on the ground or losing them.

    • Pull sharpening stones off the end of the shaft.

    • Be sure to remember the order and placement of each individual stone so you can reassemble them in the same order.

where does one get the replacement stones. im not seeing they in my amazon/google searches. also cant seem to see them on manufacturers website section for parts.

Same question. Where to Purchase sharpen stones. Would like to have them before I disassembled the unit. I have had my sharpener for eight years and use it quite often as my wife likes sharp knives.

**Same question. Where do I purchase sharpener replacements.

=on research,

Chef's-Choice customer Support indicated 'no serviceable parts inside /or provided', return the sharpener to manufacturer for an evaluation 'repair cost estimate". They do not give estimates on any work or the wheels, they need to have it in hand in their service department for an 'estimate' on repairs.

~therefore appears

no Chef's-choice sharpeners have replacement service parts available or service documentation available to the customer.

Having opened one up and examined the one I have,

...a fine-Gd quality diamond/emery paper and a Gd-quality adhesive from a hardware is your options unless you want to return it to them.

Though I was thinking a small cutting wheel of same shape size for a refit, saw a collection of sizes when at harbor-f week or so ago but thik to course an app
