U Series chips are always soldered :-(. No, it can’t be done. The good news is you bought an i7 system, so you don’t have a poorly aged i3 that’s EOL over a soldered CPU.
The problem is they’re designed for thin and lights, but got abused in recent years and put in everything. So now you have this dumpster fire of soldered laptops that are compromised which wouldn’t have been if a normal CPU was used when it was a normal machine.

It's usually Intel HD based on these Intel U machines. No - it's part of the CPU.
Don't fret it - you have HD 4000, which are still solid onboard graphics. That's where the performance gains from Sandy to Ivy Bridge come from - not CPU performance. HD 3000->4000 is major and the CPU is practically nothing.
It's no Iris machine, but it's still very good. I still like HD 3000, but if my Sandy Bridge machines died I'd replace them with Ivy or Haswell machines no questions now that I have had time with 3000 and 4000 hardware. HD 4600 (i5/i7 Haswell) really stepped things up from HD 3000.
i also have a nvidia geforce Gt 625m video card
If you have not already done it, replace hard disk drive with a SSD drive and increase the RAM.

and then upgrade all drivers.
This will produce a much more dramatic improvement in performance than upgrading CPU or GPU, especially the SSD.
