Some models have the option to turn this off, but this model doesn't, and it's annoying when I have the auto-brew set early in the morning and wakes up half the house. Do you need to access the control board to remove the piezo component to stop it, or is there a better way?

You could remove the piezo. But What I do is open up things that are too loud and put heavy tape on the piezo. It still makes sound but it's quieter.
It's an easier fix. If the quieter sound is quiet enough.
