My fitbit versa 3 does not sync the time, is always 20-30 minutes slow

What phone are you using? If you're using an iPhone, it may be the cause of that, since iPhones sometimes kill apps in the background. If you're using an Android, you may lock the app so it's running all the time, so the sync is working.
Note that it may also be that the watch synces every 30 minutes on purpose to save battery life.
