If I want to upgrade to a SSD and replace the existing HDD would you be able to replace the existing HDD with a 2.5" SSD? Also, would it be possible to purchase and install an additional SSD stick like the one that Apple puts in the units from the factory?

You most definitely can replace the hard drive with an SSD to gain a performance increase. as for the ssd stick im not sure what you mean . are you referring to the fusion drive ? Take a look at this guide for more info and it may answer your questions. Mac mini Late 2014 Teardown
