Best Way to Upgrade Fusion Drive

I’m looking to upgrade my late-2014 27” iMac ‘s 3TB Fusion drive (32GB RAM, 4.0GHz).  I am hoping to increase the speed since I do a lot of photo editing of large files in Adobe.  My current Fusion drive consists of a 128GB PCI SSD and a 3TB HDD.  Would it be better (in terms of speed) to get a 1TB PCI SSD and leave the HDD, or leave the 128GB PCI SSD and replace the HDD with something like a 2TB SSD.  Since the cost is similar for both, I’d rather get more storage with the 2TB SSD, but if my speeds would be better with the 1TB PCI SSD I would prefer that.

The only other option I consider is to purchase a 2TB External 3.0 USB drive and use it as a boot disk.  While this would be less DIY work, I suspect that this would be slower than either of the above options.

Any thoughts?
