Apple no longer supports updating the OS on this old machine. I have the original install discs but I understand that later operating systems can be installed. How do I know how recent an OS to install before bumping into hardware limitations?
Having been a lifelong Microsoft user, this is all very new and foreign to me, so forgive me if I am asking elementary questions.

According to EveryMac website it was released with Mac OS X Tiger 10.4 & This system can run the last version of OS X 10.8 "Mountain Lion" and OS X 10.9 "Mavericks" although it does not support the AirDrop, AirPlay Mirroring, or Power Nap features. It also supports the last version of OS X 10.10 "Yosemite" and OS X 10.11 "El Capitan," but no advanced features are supported. It is not supported booting into 64-bit mode when running Mac OS X 10.6 "Snow Leopard," either. It does support "OpenCL" and Grand Central Dispatch, though. It is not supported running macOS Sierra (10.12) or subsequent versions of newer macOS at all..... 2007 MacBook Pro's are also not supported by Open Cores Legacy Patcher, so the best you'll get out of it is 32bit OS X 10.11 "El Capitan".
