I'd like to upgrade to the SSHD (HD/SSD , I have found clear guidance for actual removal and replacement of the drives. but am unclear about how to transfer the data from the old hd to the new sshd. Also how to convert the old hd to external usb storage drive. Thanks for providing such helpful site.

To convert the old drive to external (from which it is relatively easy to transfer data) you need an external case for that drive. I like OWC for things like that, but you can look elsewhere.
Basically before or after you change dirives you clone or use time-machine to backup/restore files.
