Can you remove the Retina display assembly and use it in the current "regular" Macbook Pro laptops that thankfully still have upgradeable storage and RAM?

No, you cannot. It's a completely new design and can't be simply swapped into an older machine. Sorry. Even if the two were physically the same, you would be connecting it to a logic board that doesn't have the same graphics capabilities of the new MacBook Pro.
