Best guess at this point is that no, you shouldn't lose any functionality by swapping out those parts. The earpiece speaker has been separated from the sensors on the display in the iPhone 13, so it can be replaced by itself without requiring soldering. Unfortunately, iFixit hasn't got a guide for those operations, but I did located a Spanish site called Nadie Me Llama Gallina that has at least two of them that you need.

Unfortunately, no luck finding a guide for the GPS Antenna, but there are several sites out there selling them.

How about taking lots of pictures as you work on your repairs and use those to create your own iFixit guides to those repairs for those who come after you? It's easy, fun and will earn the appreciation of the repair community!
