Your phone uses the cellular network to check its time from time to time, unless you can't connect, in which case if you have a WiFi connect it will leverage the internet time service, then lastly it will use the phones internal clock for its time.
 
What can also happen is your location herewere you are is your timenear a time zone border is nearborder, so the iPhone is confused on which TZ you are really in based on the physical location.

What can happen is your location here is your time zone border is near so the iPhone is confused on which TZ you are really in based on the physical location.
